Directions
Ingredients:
For the filling:
- 1 lb Green River Regenerative Farm ground lamb
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 cup peas (fresh or frozen)
- 1 medium zucchini, diced
- 1 cup vegetable broth (preferably homemade or low-sodium)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce (or tamari for gluten-free)
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1-2 tbsp olive oil (for sautéing)
For the mashed potatoes:
- 4 large Yukon Gold potatoes, peeled and chopped
- 1/2 cup heavy cream or milk
- 2 tbsp butter
- Salt and pepper to taste
Instructions:
- Prepare the mashed potatoes:
In a large pot, bring the chopped potatoes to a boil in salted water. Cook until tender, about 15-20 minutes. Drain and return potatoes to the pot. Mash with a potato masher or hand mixer, adding heavy cream and butter. Season with salt and pepper to taste. Set aside. - Make the lamb filling:
In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes. Add the ground lamb, breaking it apart with a spoon, and cook until browned, about 7-8 minutes. - Add the diced carrots, zucchini, and peas, and cook for another 5-7 minutes until the vegetables begin to soften. Stir in the tomato paste, Worcestershire sauce, rosemary, and vegetable broth. Bring the mixture to a simmer and cook until it thickens, about 10-15 minutes. Season with salt and pepper to taste.
- Assemble the Shepherd’s Pie:
Preheat your oven to 375°F (190°C). Transfer the lamb and vegetable mixture into a large baking dish, spreading it out evenly. Spoon the mashed potatoes on top and use a spatula to spread them evenly, covering the filling. - Bake and serve:
Place the dish in the oven and bake for 20-25 minutes, or until the top is golden and slightly crispy. For a crispier top, you can broil for 2-3 minutes at the end. Remove from the oven and let cool for a few minutes before serving.
